Oatmeal Pancakes with Mango Sauce

I just returned from an AMAZING girls’ trip in the Okanagan, British Columbia with my best childhood friends. We visited wineries, ate delicious food, swam, napped, played games and laughed until the early hours of the morning. My good friend Danielle who lives in Kelowna had this recipe for oatmeal pancakes that I had to steal and post on the blog. They were so good with this mango cinnamon sauce and piled with whip cream and berries! The oatmeal makes them very filling and great for leftovers the next day. See below for the recipe:

Oatmeal Pancakes

1.5 cups oats

2 cups milk

1/2 cup whole wheat flour

1/2 cup all purpose flour

1 tbsp packed brown sugar

1 tbsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

2 eggs

1/4 cup butter

Combine oats and milk and let stand for 5 minutes. Whisk together other dry ingredients. Whisk eggs and butter into oat mixture. Pour over dry ingredients and whisk together. Cook in pan and enjoy!

 

Cinnamon Mango Sauce

2 cups frozen mango chunks

2 tbsp butter

1/4 cup sugar

1 tbsp cinnamon

Cook mango chunks in pot with butter, add sugar and cinnamon. Blend together or keep chunky. Pour over pancakes.
