Blackberry Peach Cobbler

This weekend is the perfect time to make a summer seasonal fruit desert. Stop by your local farmer’s market to pick up the freshest, most flavorful fruit of your choosing. My two favorites, blackberries and peaches, are a great combo in a flaky crust with a dollop of whip cream! These cobblers I made are in individual portions and have a sprinkling of sliced almonds on top. Yum! See below for the recipe:

Blackberry Peach Cobbler (2 servings)

2 cups blackberries

2 cups chopped peaches

1 cup  whole wheat flour

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

3 Tbs unsalted butter

1/3 cup sugar

1/3 cup nonfat buttermilk

1/2 cup sliced almonds

Preheat the oven to 350 degrees F. Spray a two small 5 inch baking dishes with oil. Combine blackberries and peaches and place in dishes. Mix the dry ingredients together and beat in butter and buttermilk. Drop the batter over the fruit. Sprinkle with sliced almonds.

Bake the cobblers about 40 minutes. Let cool, and enjoy with ice cream or whipped cream, or by themselves!
