Do you ever crave pasta but don’t want the carbs? My mom has been making this zucchini spaghetti lately and it is so delicious! All you need is a spiralizer and you have instant veggie noodles. Here is her recipe:
I sautéed some spring scallions and garlic. After a couple of minutes add chopped tomatoes, chopped spinach and some chopped basil. Sauté with a couple of tbsp of liquid. I use white wine. Turn off element, put lid on pan. Spiralize zucchini add to pan and stir with heat on for one minute. Turn heat off, place lid on and let sit for 2 minutes. Serve with fresh shaved Parmesan and pepper.. Enjoy!
