My absolute favorite go-to meal is thai chicken lettuce wraps. I made these last night and am so excited to eat the leftovers for lunch today! Not only are they loaded with vegetables, they are super easy to make and can be tailored to your personal preference of veggies and sauce. They also make an awesome mid-day snack if you are craving a crunch and need protein.
Ground Chicken (with olive oil, salt, pepper and chopped onions)
Cook the chicken on low simmer while you chop the veggies. I like to mix all the veggies together and set the butter lettuce on a separate plate. Enjoy with peanut sauce, Sriracha, lime juice, cilantro and ground peanuts on top!
