Rosemary and Macadamia Nut Rack of Lamb

So I have to admit, I can’t show the actual pictures of this meal I made yesterday because none of them turned out to be “pretty”, and the lamb itself was gobbled up quite quickly! I got this recipe from my mom and couldn’t believe how easy it was. She has been making it for years on Christmas Eve and when we picked up a rack of lamb yesterday at Costco I decided to give it a try. I was a favorite for all who tasted it and I will definitely be using this as my meal to impress in the future.



Crushed Macadamia Nuts

Bread Crumbs

Salt & Pepper

Olive Oil

Rack of Lamb






Put wine, raisins and currents in pot on stove and simmer on low for 1-3 hours

Set oven to 350, add olive oil and salt and pepper to lamb racks.

Mix together breadcrumbs, chopped rosemary and crushed macadamia nuts. Add to lamb rack.

Bake for 25-35 mins, until medium rare. Let sit for 5 mins. Thermometer should read 155 degrees.

Enjoy with current sauce and a side salad!
